Matt’s Chocolate Mousse desert Recipe

I’ve called it this because my husband Matt whips it up regularly and in no time.  This is a regular dessert at our home.  It’s simple, healthy and helps to balance irregular blood sugars before bed with it’s good healthy fat and no or low sugar.  The chia seeds and shredded coconut also aid in balancing blood sugar levels – due to both being high in fibre.  This is an ideal dessert for anyone prone to anxiety, up and down moods, or early morning wake ups due to crashing blood sugar levels.

Serves 4

Prep time 5 minutes

PLUS 60 minutes in fridge to set



  • 2 desert spoon boiling water
  • 2 desert spoon raw cacao powder
  • 1 desert spoon chia seeds (the more you add the firmer it will be)
  • 1 x 270ml can coconut milk
  • 2 desert spoon shredded coconut
  • 2 tsp vanilla essence
  • Stevia to sweeten (equivalent to 1 tsp sugar in entire mixture) or 1 teaspoon maple syrup



  1. Add Cacao and Boiling Water to saucepan and mix into a paste
  2. Add Coconut Milk, Chia seeds, Vanilla and Stevia and stir whilst warming
  3. Do not boil
  4. Add Shredded Coconut just before next step
  5. Pour into small glasses to set and serve (I use Chinese tea cups)
  6. Place in Fridge for 60 minutes (minimum) to set

You can leave overnight if required

Sprinkle extra shredded coconut and or cacao nibs on the top and serve with natural plain yogurt.  I choose goats or sheep yogurt.
