Bliss Balls Recipe

Chocolate Coconut Bliss Balls Recipe

A great home made snack with healthy fats, protein and fibre to regulate blood sugar levels between meals or when you need it most.

Dry Ingredients

1/2 cup almond meal
1/2 cup hazelnut meal (or just use 1 cup of almond meal)
1/4 cup sunflower kernels (or crushed nuts – anything to add some texture)
1/4 cup desiccated coconut

Wet Ingredients

1/4 cup Coconut Oil (melted)
1/4 Cup Coconut Milk
2 tsp Vanilla Essence
Stevia  (equates to 2 tsp sugar)
Chia Bomb (2 tsp Chai in 1/4 cup water – let sit for 3-5 minutes)
4 tsp Cocoa

Method

Mix all dry ingredients in a bowl 

Combine the wet ingredients into a paste
Add in this order

  1. Melt Coconut Oil in saucepan over medium heat
  2. Add Coconut Milk
  3. Add Vanilla Essence
  4. Add Stevia and stir
  5. Add Cocoa and Stir
  6. Stir the chai bomb well and then add to the paste

Pour Wet Ingredients in Dry Ingredients and Mix with a wooden spoon (it will be quite sloppy)
Hand roll small balls (yes…still very sloppy – a bit of fun to enrol any near by children in this job?)
Put some Dessicated Coconut into a small bowl and roll the balls in that to coat
Place balls on a tray and put in fridge for at least 30 minutes
