This delicious bone broth soup is a meal in one. It supports the immune system and is great for building energy, and repairing the digestive system and a leaky gut. It is an easy “chop & chuck” kind of meal. Great in the lead up to winter to strengthen your resistance to colds and flu.
Ingredients
1 large medium onion diced
1 leek chopped
Approximately 1-2 thumbs of ginger (more or less if you like)
2-3 big cloves of garlic chopped
Dried shitake mushrooms. If whole, 5-6 chopped. If already sliced 1-4 cup. An age old immune stimulating mushroom.
Stock (either homemade or massel chicken stock cube – 1 cube)
Chicken (either use 3-4 organic chicken legs with skin off; or chicken carcass plus organic chicken meat as extra added). Cooking with bones supports repair of digestive lining and builds immunity & energy.
Miso paste – available from health food stores (as extra flavouring/stock, and for digestive support) 1 desert spoon
Vegetables – 1 large carrot; 1 capsicum; 1 zuccini; 1 head of broccoli; handful green fresh beans; ½ cup of sweet potato or pumpkin chopped; 1 bunch of coriander or parsley; 2-3 sticks celery with green leafy tops on ends. Or whatever extra vegetables you prefer. Optional: ¼ cup of brown basmati rice.
Method
Makes approx 4-6 bowls of soup….better to eat it within 2 -3 days. It isn’t great frozen as the vegetables lose their freshness. Aim to have it as a gut building medicine 1-3 times a week and to strengthen a weakened immunity. I have it all year round. Enjoy!
